Recipe of the Month
*********************** Gram's Banana Bread ***********************
5 tablespoons of butter * 1/2cup granulated sugar * 1/2cup firm packed brown sugar * 2 large eggs * 1 teaspoon vanilla * 1-1/2 cups smashed very ripe bananas( let the skins turn black before using them) * 1-3/4cups whole wheat white flour * 1 teaspoon of baking soda * 1/2 teaspoon salt * 1/4 teaspoon baking powder * 1/2 cup heavy cream * 1/3 cup chopped walnuts
Preheat oven to 350 degrees. Spray a 9x5x3 loaf pan with nonstick cooking spray. Beat butter in a large bowl with electric mixer at medium speed until light and fluffy. Add both sugars and beat well. Add eggs and vanilla, beat until well blended. Add mashed bananas, beat on high for 30 seconds. Combine flour, soda, salt, and powder in a medium bowl. Alternately add the flour to the butter mixture with the cream, ending with flour. Mix a little, now add the walnuts and mix well. Pour batter evenly into prepared loaf pan. Bake until brown and a toothpick inserted into the middle comes out clean, about 1 hour and 15 mins. Cool bread in pan on wire rack for 10 mins. Remove from pan let cool completely. ****************************************
